Spiced Chicken - Mon 22nd Aug 2011
Mix together 3 crushed cloves of garlic, the zest and juice of 1 lemon, 2 tsp of ground coriander, 2 tsp of ground cumin and 2 tsp of paprika. Set aside 1 1/2 tbsp then mix the remainder with 2 1/2 tbsp olive oil. Pour the marinade over 4 chicken breasts (with slashes on 1 side) and leave to marinate in the fridge for at least 1/2 hour. When ready, grill the chicken for 15-20 minutes, turning frequently. Mix the reserved lemon spice mix into 4 tbsp creme fraiche together with 15 g finely chopped coriander. Serve with the chicken.
