Hot Salsa Dressing - Mon 25th Jul 2011
Heat 2 tbsp olive oil in a pan and add 3 chopped tomatoes, 1 chopped onion, 1 crushed clove of garlic and 1/2 tsp or more of chilli powder (to taste). Fry for 5 minutes. Remove from the heat and stir in 1 tbsp balsamic vinegar and 1 tsp lemon juice. Serve hot or cold to dress roasted vegetables or salads.

Peel and dice 800 g mixed root vegetables. Whisk 1-2 tbsp olive oil with at least 1/2 tsp each chilli powder, ground cumin and ground coriander. Tip veg into a shallow roasting tin, scatter over 1 finely chopped garlic clove and drizzle with the oil mixture. Toss well and shake veg to a single layer. Roast for 30-40 mins at 200 degrees C/gas 6 until tinged brown, turning once or twice. During the last 5 mins, sprinkle with 1 tbsp sunflower or pumpkin seeds and continue roasting. Season with ground black pepper and serve hot, garnished with chopped fresh coriander.

Heat some oil in a frying pan over a high heat. Brown 400 g beef strips for a couple of mins. Remove from pan and keep warm. Lower the heat, add more oil and cook a sliced onion, 2 cloves crushed garlic and 2 chopped red/yellow peppers until softened slightly. Stir in 1/2 tsp each chilli powder and ground cumin and a good pinch of paprika. Cook briefly then add the beef and mix together. Meanwhile, warm some tortillas. Mix a chopped avocado with around 200 g ready made tomato salsa. Spoon some beef mixture onto each tortilla, top with a spoonful each of salsa and soured cream. Roll up, or fold to serve.
