200g pasta flour 2 eggs
Mix the flour and eggs together to form a dough, then knead vigorously for 5 minutes. Place ball of dough in a bowl, cover with a damp cloth and leave for 15 minutes. Roll out on a floured surface until thin, dust with flour, and leave for 10 minutes. Cut sheets into strips of the desired width (eg 10cm for lasagne or 5mm for tagliatelle).
