Mix the gram flour with water until the consistency is like a rich pastry dough -smooth, not crumbly.
Add some crushed garlic (as much as you like!) and crushed sea salt.
Use the wee scoops you need for making melon balls in order to shape tiny balls of the dough, and shallow-fry in sesame oil till golden.
Eat warm with salt pickled vegetables, it is filling and very gorgeous, with the texture of a good quality nugget.

Light and powdery, rice flour is an ideal coating for frying or deep-frying anything. It makes a very interesting batter, that browns beautifully and is deliciously crispy, without overpowering the food that it's coating. Also, it is easier to digest than most batters or flours when fried.
And of course, it really helps any gluten-free recipe!

I AM FAIRLY NEW TO GLUTEN FREE BAKING AS I HAVE TENDED TO BUY SHOP MADE ITEMS UP UNTIL NOW. I LIKE THIS FLOUR AS IT IS PRETTY GENERAL USE HAVE MADE BREAD AND CAKES WITH IT SO FAR WITH GOOD RESULTS/. NICE TO BE ABLE TO BUY THE DIFFERENT VARIETY OF FLOURS IN ONE PLACE

I like that this can be pretty much used in the same way as regular wheat flour. My baking has tended to be drier than before though, but I have had to drastically change my diet so that could also be down to a number of other changes in ingredients. (wheat-free, dairy-free, sugar-free...) Nevertheless, I am getting some nice results on many different recipes :) Have made cornish pasties, lemon biscuits, a lovely 'madeira' cake with fresh cherries and real lemon in it... :)

I make my own date slices using this flour, as I avoid wheat in my diet. It's versatile & can be used just like any wheat flour.

Dove's farm makes great specialty flours, absolutely wonderful variety for gluten-free folks. This is a particularly nice rice flour as it is not as gritty as other ones I have come across.

I always say, if you want to bake a cake that has exactly the same consistency as a shop bought birthday cake (that elusive, fluffy lightness that eluded me for years) add one to two ounces of rice flour in your recipe. It never fails to make a charming cake, an it means a 1kg bag lasts for ages.

I purchased this to make gluten free brownies and they were amazing. We made a massive batch to take on holiday with us and my partner kept secretly sneaking off to eat them they were so good! Right after we cooked them they tasted slightly floury but after they had completely cooled they were fudgey and rich! Mmm
