Xanthan Gum, despite it's exotic name is a fairly down to earth polysaccharide which lends a diverse range of properties to 'free from' foods. Xanthan Gum is predominantly used in Gluten free baking to replace the elasticity which is lost from doughs in the absence of gluten. When used in fat free cooking, Xanthan Gum improves the thickness and creamy qualities of sauces and ice creams while keeping the fat content minimal.
Xanthan Gum is not just for those with specialist diets - adding just a sprinkle to smoothies or iced coffee makes for a rich and smooth texture. While a small pinch improves the stability of a vinaigrette salad dressing reducing the speed of separation between oil and vinegar.
A note of caution however! A little goes a long way. When it comes to using Xanthan Gum, be careful to closely follow the recipe and if in doubt use less rather then more.

Chocolate Crinkles - Mon 29th Jun 2009
Cookie-baking-time with Xanthan gum! I used this recipe to make some chocolate cookies. They taste very good, you can't even tell they're gluten-free! They are very sweet, so I might add less sugar next time I make them....
Chocolate Crinkles
Ingredients:
125ml vegetable oil
115g dark chocolate
400g sugar
3 eggs, room temperature
2 teaspoons vanilla
250g rice flour mix
1/2 t xanthan gum
1/4 t salt
1 tsp baking powder
Melt chocolate, then mix with oil and sugar. Mix in eggs, one at a time. Stir in the vanilla, then add the rice flour mix, xanthan gum, salt and baking powder. Mix everything together, then stick the bowl in the fridge for a few hours.
Heat oven to 175°C. Form dough into small balls. Place them on a greased cookie sheet (about 3cm apart), and bake 10-12 minutes.

Does a great job of thickening up my green smoothies in the mornings and vegan safe. Into a blender goes a frozen banana, any combination of your favourite fruits, apples, pears, peaches, mangoes, grapes, kiwi, whatever ya fancy, plus a bit of cucumber and a handful of greens (spinach works really well, or romaine or other dark lettuce) Half a cup of non-dairy milk and half a cup of water. Vegan protein powder if you're active and half a tsp of Xanthan gum... Blitz and enjoy... Best start to the day!
