Chicken with Parmesan - Thu 8th Dec 2011
Put 4 chicken breasts between pieces of clingfilm and beat with a rolling pin to about 1 cm thick. Mix together 3 tbsp grated Parmesan, 150 g breadcrumbs and some chopped parsley on a plate. Season 75 g plain flour and put on another plate. Beat 2 eggs and put on a third plate. Dip the chicken first in the flour, then in the egg and then in the breadcrumbs. Heat 2 tbsp oil in a large frying pan and cook the chicken for about 3 - 4 mins on each side. Serve.

Top thick granary toast with steamed asparagus, Parmesan shavings, a generous squeeze of lemon juice and black pepper.

Try cutting a sheet of ready rolled puff pastry into squares, brushing with green pesto and topping with asparagus spears (split lengthways) and slices of slices. Sprinkle with parmesan and bake in a preheated oven at 220 degrees C/gas 7 for 15 mins until golden. Garnish with rocket leaves.
