Glazed Carrots - Tue 31st Jan 2012
Put 250 g small baby carrots (washed and trimmed) in a small saucepan withthe juice and rind of 1 large orange, 30 g butter and 1 tsp sugar. Just barely cover with water. Bring to the boil, cover and simmer until the carrots are tender and the water has evaporated. Watch closely towards the end of cooking, and shake the pan occasionally to prevent the carrots sticking.

A beautiful creamy butter with a very rich taste. Incerdible good value for a butter of this quality. And it's great that it is available as unsalted.
