Amazake is a rich & creamy wholefood dessert with no added sweeteners or dairy ingredients. It is made according to a traditional Oriental recipe by cooking whole grains and adding a special culture (called koji). The koji reduces the starches in the grain into their own sugars, without depleting the grain of its wholesome goodness. The result is a nutritious, naturally sweet pudding that is easily digested.
