Fruity Spiced Rice Pud - Mon 16th Jan 2012
Put 200 g long grain rice into a pan with around 75 g brown sugar (or to taste). Add some vanilla extract and 700 ml milk. Boil, then reduce heat and simmer for around 15 mins, stirring. When milk is almost all absorbed, stir in another 700 ml, along with 4 stoned and sliced plums (or some other stone fruit - peaches, nectarines, cherries, apricots etc). Simmer, stirring, for 10-15 mins until soft and creamy. Sprinkle with cinnamon and serve. Also delicious cold.

Blend 1 ripe banana with 300 ml ice-cold milk, 15 g ground almonds and a pinch of ground cinnamon. Sweeten further with agave nectar or honey if you wish.
