Baked Feta Chees with Tomatoes - Wed 11th Feb 2009
Feta is absolutely fantastic as it is in a great Mediterranean salad. But occasionally I like to warm and melt my taste rich fetta for a starter or snack. Try it like this
Baked feta
4 oz feta cheese
3 medium tomatoes, red (raw)
2 tbsp fresh or dried oregano
1/2 oz finely chopped onion

Directions
Slice tomatoes and crumble feta and sprinkle onion and oregano. Layer in small baking dish. Bake for 20 minutes at 350 degrees or until tomatoes are soft and cheese is melted. serve with Dr Karg crackers, bread sticks or oatcakes.

Feta Stuffed Squash - Fri 17th Jun 2011
Halve a small butternut squash and scoop out the seeds and stringy bits. Bake in a preheated oven at 200 degrees C/gas mark 6 for around 30 mins. Saute a red onion until soft and mix with a generous portion of feta, some sundried tomatoes, basil and pumpkin seeds. Place mixture into centre of cooked butternut and return to the oven for 10 mins. Serve with a balsamic-dressed salad.

Try a salad of peeled, sliced clementines, crumbled feta cheese, diced red onion and fresh lettuce.

Tips

Try... - Thu 24th May 2012
Try slicing a watermelon into segments. Cut the skin away and dice the flesh. Mix the watermelon with sliced cucumber and pea shoots. Sprinkle feta cheese and lime juice over the salad and serve as a salad.
