Mediterranean savoury crumble -DELICIOUS!!

In an oven dish slice big juicy tomatoes, courgettes, sun-dried tomatoes, green and black olives, chopped fresh oregano and basil, a little thyme. No need for salt, believe me! Top with crumbled feta. Then, in a separate bowl, crush some black peppercorn oatcakes, mix in a bit of olive oil and some pumpkin seeds. This will be your topping. Lay it carefully and generously on top of afore-mentioned veggie mix, and put in the oven at 180°C till golden brown. Absolutely delicious cold, and probably warm too!
