Serving Suggestion

The soft, springy curd of Halloumi resembles fresh mozzarella and has a mild yet tangy flavour. It's so versatile, it can be grilled, grated, marinated, fried or eaten plain. The true characteristics of this cheese are only revealed on heating, traditionally a 'kebab'cheese and great cubed, skewered and grilled over charcoal.

Blend of fresh pasteurised cow's, sheep's and goat's milk, salt, non-animal rennet, mint.

Other Information

The incredible Cypriot cheese, has been around for hundreds of years but is just now catching on. Halloumi is made by hand a mix of sheep's and goat's milk.

Spiced Halloumi - Sat 9th Jul 2011
Cube the halloumi and thread onto 6 skewers with some red onion, courgette and aubergine. Arrange in a shallow dish. Mix a marinade/dressing using 3 tbsp lime juice, 6 tbsp olive oil, 3 tbsp chopped mint and some dried chilli flakes. Reserve a little as a dressing and use the rest to coat the kebabs. Leave for 10 mins. Griddle for around 8 minutes, turning halfway, until the vegetables are starting so soften and char. Serve with the remaining dressing.
