Creamy Salmon Pasta - Sat 12th Nov 2011
Mix 300 g Greek style yoghurt with the grated rind and juice of 1 small lemon. Season with black pepper and stir in some freshly chopped dill. Flake the contents of two 213 g cans of salmon into a bowl and set aside. Using a vegetable peeler, peel off ribbon-like strips from 2 courgettes and 2 carrots. Steam until just tender. Meanwhile prepare 400 g cooked pasta. When ready, stir the lemon yoghurt mixture into the drained pasta and toss in the hot ribbon vegetables and salmon. Mix together and serve immediately, garnished with a little chopped dill.

Tips
Extra thick creamy yogurt - Fri 7th Aug 2009
This natural greek yoghurt is one of my favourites. It has the texture of double cream and you can spoon it out and eat it on it's own or with fruit. It is a very luxurious product, it's extra thick creaminess makes it versatile for breakfast, for savoury and for sweet recipes and meal ideas.
