USEABILITY - Thu 21st Jul 2011
I've found this cheese freezes and defrosts really well. Wrap it tight in freezer foil and in a freezer bag. It's got a rich, creamy taste with a slight tang.

Mix together 175 g stilton, 200 g creme fraiche, 4 finely chopped spring onions, 2 finely chopped sticks of celery and some ground black pepper to taste. Serve with vegetable cruditées and sliced pitta bread.

Thinly slice some juicy pears, place on toast, sprinkle with blue cheese and flash under a very hot grill to melt. Serve immediately.

Try serving boiled new potatoes crushed lightly and scattered with crumbled Stilton.
