Three-Seed Oat Bars - Wed 5th Oct 2011
Melt 100 g sunflower spread with 3 tbsp golden syrup gently in a saucepan. Remove from the heat and stir in 100 g oats, 50 g millet flakes, 2 tbsp each of sunflower seeds, pumpkin seeds and sesame seeds, 2 mashed bananas and 100 g chopped dried dates. Mix well and spoon into a greased and lined 18 x 28 x 4 cm baking tin. Level the surface and bake for around 30 minutes at 180 degrees C/gas mark 4 until golden. Cool for 5 minutes and mark into 14 bars. When completely cool, store in an airtight container.

Strawberries & Cream Fairy Cakes - Sat 12th Nov 2011
Cream 150 g sunflower spread and 150 g caster sugar together until light and fluffy. Gradually whisk in 3 medium beaten eggs and 1 tsp vanilla extract. Fold in 150 g self-raising flour, sifted. Sit 12 deep paper cases in a muffin tin and divide the mixture between them. Bake at 180 degrees C/Gas 4 for 20 minutes until risen and golden. Cool, then cut out a cone shape from the centre of each cake and cut the cones in half to form wings. Whip 150 ml cream and place a spoonful on top of each cake, followed by the wings, then some fresh strawberry pieces. Dust with icing sugar and serve.br />br />

I love butter, but am trying to be healthier and get away from dairy - for myself and the cows benefit! This reminds me a little of Flora margarine, and with a nice dollop of jam on top, you won't be able to tell it's not butter.
