Marinated Herrings - Sun 15th Jan 2012
Chop around 675 g fresh filleted herrings into small pieces and season with 2 tbsp soya sauce and ground back pepper. Combine around 240 ml natural yoghurt with the grated rind and juice of 1 lemon, 4 tbsp white wine vinegar, 3 tbsp olive oil and 1 tbsp clear honey. Add 1 cored and diced red-skinned apple, 1 finely sliced small onion, 1 tsp dried dill and 2 bay leaves. Mix well and stir in the herring pieces to coat uniformly. Leave to marinate for at least 24 hours in the fridge. Stir well before serving.

Try tearing strips of meat from a roast chicken. Peel and cut a fresh mango into cubes, then place in a bowl and add a little mild curry powder, some natural yogurt and the shredded chicken. Mix well and season with freshly ground black pepper. Use as a sandwich filler or with jacket potatoes.
