Creamy Butternut Soup - Mon 16th Jan 2012
Heat 2 tbsp olive oil in a saucepan, add 1 small onion and 2 sticks of celery (both chopped) and fry gently for 5 mins. Add 500 g diced butternut squash and fry for a further 5 mins. Add 500 ml veg stock, bring to the boil and simmer for approximately 25 mins until the squash is tender. Blend until smooth. Add 100 g cottage cheese and blend again, adjusting the consistency if necessary. Season to taste with ground black pepper and some dried herbs. Serve hot with a swirl of creme fraiche or natural yoghurt.

Normally with low fat cottage cheese they are watery and bland. This has a really firm texture with a good taste. Highly recommend.

This is far better than any other fat-free cottage cheese available as a supermarket brand. It is nice and firm and holds its shape in contrast to the usualy sloppy alternatives. I have a habit of eating it straight from the tub I'm afraid, despite my very best efforts to save it for salads, potatoes etc. I never buy any other brand now as in general they are not at all good by comparison.
