Mini Stuffed Tomatoes - Tue 6th Dec 2011
Cut the top off 24 cherry tomatoes and scoop out the pulp. Drain upside down on kitchen paper. Mix 1/2 tub creamy sheese with 3-4 finely chopped gherkins, a small squeeze of lemon juice and seasoning. Fill tomatoes with cheese mixture and serve sprinkled with chopped flat leaf parsley.

This is our family's favourite of all the non-dairy cream cheeses - both for taste and consistency! We have tried every soya cheese possible as our eldest daughter is totally allergic to all dairy products and most of the other better known names either have the taste or texture of cardboard - usually both. Bute's is head and shoulders above the rest and a great all-rounder to always have a tub in the fridge - either spread straight onto toast, in sandwiches or cooking savoury and sweet meals.

This beautifully smooth, creamy, slightly tart cream cheese substitute is delicious. Actually I think it nicer than Philadelphia which I used to eat prior to being diagnosed with dairy allergy. I will definitely be buying this again.

My toddler has a dairy protein allergy so had never had cheese like her friends before. My partner searched the internet for "dairy-free cheese" and found this site. We thought that with her not having tried cheese she wont know the difference. Although I'm not a fan myself she loves Creamy Sheese in a sandwich or cheese cake.

Cook 75 g peas until just tender then drain. Put 75 g young leaf spinach in a colander and pour boiling water over until wilted. Run under cold water to cool, then squeeze out all the excess water. Put the spinach and peas in a food processor with the flesh of 1 large ripe avocado, 100 g creamy sheese and 1 tbsp chopped fresh mint, and whiz until smooth. Season to taste and serve with vegetable crudites, grissini or strips of pitta bread.

I particularly like this spread with a bit of garlic and olives on various crackers. I find that tempers the subtle sweetness of this 'cheese' which I'm not too keen on. The texture is soft enough and creamy, and it's quite strong so it can last a long time.

Tips

Try spreading on ciabatta and filling with roasted mediterranean vegetables. Throw some unpeeled garlic into the veg tray before roasting, then squeeze out the puree into the sheese for extra flavour.
