Salmon & Cream Cheese Bites - Tue 6th Dec 2011
Spread a layer of clingfilm on a chopping board and arrange 200 g smoked salmon pieces on it in a rectangle. Mash 100 g cream cheese with a fork then mix in the flesh of a ripe avocado that has been cut into small pieces. Add juice of 1/2 lemon, some chilli flakes and season to taste with freshly ground black pepper. Spread over salmon slices, carefully roll up and cover with clingfilm. Freeze for 10-15 mins, then slice into rounds and serve with lightly dressed baby salald leaves.

Smoked Mackerel & Cream Cheese Pate - Wed 8th Feb 2012
Mix flaked smoked mackerel, thinly sliced spring onions (set aside a few to garnish), cream cheese, a few drops of tabasco sauce, lemon juice and freshly ground black pepper until well blended. Chill until needed.
