A mushroom that grows on shii (oak) trees, they are cultivated in the damp forests of Japan and slowly sun-dried to preserve their subtle but distinctive flavour.Cooking InstructionsBefore cooking, simply soak the mushrooms for 10 minutes, removing any hard stem parts. Cut into slices if desired and cook with grains, stir-fries, stews and salads.IngredientsDried shiitakeRecipeBroth: For a flavourful soup or noodle broth, boil a few shiitake and their soaking water with a piece of kombu for 15 minutes. Season with shoyu soya sauce.Deep-fried mushrooms: Soaked shiitake dipped in batter are superb deep-fried and served with a ginger and shoyu dip. Shiitake gravy: 4 shiitake, soaked for 15 minutes and sliced 1 tbsp unrefined sesame oil 1 onion diced 1 bayleaf 1 tbsp shoyu soya sauce 4½ cups kombu broth or water 1 cup seitan, diced 1 tbsp grated orange rind 2 tbsp kuzu Heat the oil and saute onions for 5-7 minutes with bayleaf and shoyu. Add shiitake, broth, seitan and orange rind and simmer for 15 minutes. Dilute kuzu with a small amount of cold water and add to gravy, stirring constantly until transparent and thick (1-2 minutes). Garnish if desired with chopped spring onions. Serve over noodles and grain dishes.
