Mix 50 g dried, ready-to-eat apricots (chopped) with 50 g whole oats and 15 g shelled, unsalted pistachios (chopped). Warm 50 g apricot spread until runny and stir into the oats. Shape into 8 rounds with your hands and place on a baking tray. Bake for 20 - 25 mins at 180 degrees gas 4 until golden. Store in an airtight container for up to a week.

A gorgeous spread (we still call it "jam"!) Lovely on toast & really delicious as a Victoria Sponge filling, especially with butter(marge)cream!

Also a low-calorie/fat treat stirred into low/non-fat yogurt.

Liked this fruit spread, but have stopped buying it because shape of jar makes it difficult to get all the spread out.
