Clearspring's wonderful organic "aged" balsamic vinegar has an incomparable mellow sweetness. This vintage balsamic vinegar is produced for connoisseurs to the same recipe as Clearspring organic balsamic vinegar but aged for much longer.
Aged balsamic vinegar has a distinctive elegant and sophisticated taste that is subtly accentuated by its long, slow maturating over several years in wooden kegs made from bay, oak and larch wood. Vintage balsamic vinegar is very dark and rich, well known for the complex flavour the ageing creates. A deliciously tantalising mixture of sweet and sour, mingling with deeper flavours of the wood and from somewhere a fruitiness, (maybe cherries? maybe cedar?) that is subtle and exotic - aged balsamic vinegar is both distinctive and unique. It's texture is thick and syrupy and it's flavour is is an intense and delicious blend of sweet and sour. You will only need a few drops of this gourmet vinegar to add the taste of luxury to your food.

Serving Suggestion

Use to add depth of flavour to sauces, dressings and marinades. A few drops will make simple salads, vegetables, and even fresh strawberries luxurious.

Cooking Instructions

Vintage aged balsamic vinegar is so rich in itself it can be used in the most simple of ways. Do not mix with spicy foods as that would be a waste, but use with simple foods to fully enjoy the character of the aged balsamic vinegar. Here are a few serving suggestions:
  • Best used on cold or room temperature foods so that the full flavour of the vintage can be enjoyed
  • Drizzle of risotto just before serving
  • Spoon over baked apple or pears and serve with fresh ricotta cheese or fresh cream
  • Wonderful with ripe strawberries and fresh peaches
  • As a side sauce for plain rice
  • Use as a dipping sauce for raw vegetable sticks
  • Drizzle over beef tenderloin after cooking before serving
  • Drizzle a little over cooked duck or chicken or unmarinated wild game, tuna halibut or sole.
  • or just taste a little on it's own.

    Use Vintage Balsamic Vinegar to add richness to salads, vegetables. You can even sprinkle on fresh strawberries for a rich and luxurious flavour.
