Clearspring Umeboshi is a deliciously tart & tangy seasoning made from the finest quality Japanese ume fruit, slowly salt- pickled in the traditional way with flavourful red shiso herb

Usage

To use, remove pit and add the flesh in place of salt to give zest to salads dressings, cooked vegetables, dips, spreads, sauces and sushi. Serve as a condiment with rice and strips of nori sea vegetable.

Ingredients

Japanese ume plums 80%, sea salt 18%, shiso (perilla) leaves 2%.

Preserved Ume apricots (translated as "plums" in English are a fascinating sharp and salty squishy fruit. Coloured red with perilla leaves (which has similar claims to antibiotic properties). From what I've read, they are the Japanese equivalent of "an apple a day keeps the doctor away". Although a single fruit is a little mouth puckering (traditionally they are served with rice for breakfast), I find that they perk you up. For me they work better than St John's Wort as a happy little zap to the system.
