Goat's cheese is a fantastic alternative to cow's milk cheese Traditionally Goat's cheese is named after the village in which they were made, as is this one. Goat's milk is bright white and makes this creamy, soft, greek style cheese with a very distincitive flavour. Funnily enough, although goat's milk has the same proteins and sugars as cow's milk, many including some who are lactose intollerant, find it easier to digest.

Goat's cheese goes best with strong flavours eg, cranberry, Use in recipes in place of cheese, but remember it has a strong flavour and less may be needed.

Goats Cheese & Beetroot Salad - Fri 1st Jul 2011
Peel and cut 4 beetroot into wedges and mix with 1 tbsp each of olive oil, brown sugar and balsamic vinegar and some salt and pepper. Spread in a single layer in a roasting dish lined with baking parchment. Roast at 180 degrees C/gas mark 4 for around 45 mins until tender. Allow to cool in the dish. Toss some mixed salad leaves with 1 tbsp olive oil and the juice of 1 lemon. Divide between 4 plates and add the beetroot. Top with the goats cheese and garnish with toasted almonds.
