Fruity Spiced Rice Pud - Thu 17th Nov 2011
Put 200 g long grain rice into a pan with around 75 g brown sugar (or to taste). Add some vanilla extract and 700 ml Alpro soya milk. Boil, then reduce heat and simmer for around 15 mins, stirring. When Alpro is almost all absorbed, stir in another 700 ml, along with 4 stoned and sliced plums (or some other stone fruit - peaches, nectarines, cherries, apricots etc). Simmer, stirring, for 10-15 mins until soft and creamy. Sprinkle with cinnamon and serve. Also delicious cold.
