Luxury Eggy Breakfast - Thu 15th Dec 2011
Whisk 6 eggs and 75 ml creamy milk together and season. In a frying pan, heat 1 1/2 tbsp butter. Add 4 finely sliced spring onions and fry for 5 mins on medium heat. Turn up heat slightly and add whisked eggs. Let them cook for 30 secs and then gently scrape using a spatula. Cook for another 20 secs and then scrape again. Repeat until cooked through. Avoid stirring too often, as eggs will dry. Meanwhile, toast 4 slices bread. Butter and cut each into 2 triangles. Put 2 on each plate. When eggs are nearly cooked, stir in some chopped chives. Spoon eggs onto the toast. Add slices of smoked salmon on the side. Garnish with more chives and serve.

Fruity French Toasts - Tue 31st Jan 2012
Beat together 4 eggs and 190 ml milk. Soak 4 slices of white bread in the egg mix. Take bread out of the egg mix and sprinkle one side thickly with icing sugar. Melt a knob of butter in a frying pan and fry the French toasts sugar side down until golden. Sprinkle the top side with more sugar and turn over in the pan. Pile with 250 g sliced strawberries (or other soft fruits) and serve immediately.

Recent research suggests that eggs now contain significantly more vitamin D, fewer calories and less cholesterol than 30 years ago. So get cracking!

These must be produced on a fairly large scale, but still it's an amazing price for organic eggs. No excuse to buy caged eggs now!
