Skylark farm is a pretty special place. Its in the heart of the Northamptonshire countryside. One of the reasons its special is because our lovely chickens are fed on only the finest grain and are allowed to wander freely about the newly planted woodland.

Heat some oil in a pan, add a finely chopped onion and gently cook for 6-8 mins. Add 1 tbsp mild curry powder (or to taste), 1/2 tsp turmeric and 250 g long grain rice. Stir for a few minutes then add 750 ml stock. Boil then reduce heat and simmer for 12-15 mins, until stock is absorbed. If rice is not done, add a little water and cook 3-5 mins longer. When rice is cooked, stir in 2 chopped spring onions, 250 g smoked mackerel, 2 tbsp chopped parsley and some lime juice. Season to taste. Top with 2 quartered hard boiled eggs just before serving.

Whisk 6 eggs and 75 ml creamy milk together and season. In a frying pan, heat 1 1/2 tbsp butter. Add 4 finely sliced spring onions and fry for 5 mins on medium heat. Turn up heat slightly and add whisked eggs. Let them cook for 30 secs and then gently scrape using a spatula. Cook for another 20 secs and then scrape again. Repeat until cooked through. Avoid stirring too often, as eggs will dry. Meanwhile, toast 4 slices bread. Butter and cut each into 2 triangles. Put 2 on each plate. When eggs are nearly cooked, stir in some chopped chives. Spoon eggs onto the toast. Add slices of smoked salmon on the side. Garnish with more chives and serve.

These aren't the best eggs ever but they are free range and of a decent size and I found them just the ticket to make crêpes.. abit flavourless and colourless in an omelette though and that's a shame
