A balance of fragrant Thai flavours including spicy red chillies, galangal and aromatic lemongrass. Red curry is eaten throughout Thailand. It is not as spicy as green curry because a larger and less hot variety of chilli is used.

Water, Vegetable Oil, Lemongrass (6%), Garlic Purée, Fish Sauce (Anchovy Extract, Salt, Sugar), Minced Chilli Paste (5%) (Chilli Peppers, Water, Salt), Onion, sugar, tomato Purée, Modified Maize Starch, Galangal (2%), Kaffir Lime Leaves, chilli Flakes, Salt, Coriander, Thai Basil, cumin, Colour: Paprika Extract; Citric Acid, Cardamom Powder.

Recipe
Thai red chicken curry (Serves 2)
1. Heat the oil in a pan and fry the paste for 2 minutes.
2. Add 400ml Blue Dragon Coconut Milk and mix with the paste.
3. Once the Milk is hot, add 2 thinly sliced chicken breasts and 1 aubergine. Cook until tender. Ensure piping hot and serve immediately with steamed rice.
*As an alternative to chicken this sauce works well with beef or vegetables such as butternut squash, green beans, sweet potato and mushrooms; simply par-boil the squash and potato before adding to the sauce.
