Spiced Apricots with Yoghurt - Mon 18th Jul 2011
Put 100 g ready-to-eat dried apricots in a small pan with 150 ml orange juice and a lightly crushed cardamom pod (seeds removed). Heat gently until the juice begins to boil then reduce the heat, cover and simmer for 10 minutes. Discard the cardamom pod and puree the apricots and juice until smooth, adding a little more juice if necessary. Allow the mixture to cool. Stir the puree into 400 ml natural yoghurt together with 2 tsp wheatgerm and serve.

Preheat oven to 180 degrees C/ gas 4. Place 50 g chopped soft dried apricots in a bowl with 50 g oats and 15 g shelled, unsalted chopped pistachios. Warm 50 g apricot jam until runny and stir into the oats. Shape into 8 rounds with your hands and place on a baking tray. Bake for 20-25 mins until golden. Store in an airtight container for up to a week.

I love the taste of these ones, more like figs than apricots, and they're lovely and soft too.

These are wonderful. I use them for packed lunches and snacking, as well as for baking. They are particularly good in home-made cookies with cinnamon.
