Caribbean Pumpkin Soup - Mon 25th Jul 2011
Fry 1 chopped red onion and 1 crushed clove of garlic in olive oil until softened. Add 1 kg pumpkin, peeled, de-seeded and chopped and 1 tsp dried ginger and sweat for 10 minutes, stirring occasionally. Add 400 ml each of coconut milk and vegetable stock and cook for 15 minutes until soft. Add extra coconut milk, water or stock if necessary. Blend, season to taste with salt and pepper and serve.
