Crush the oatcakes with a pestle and mortar, but be careful not to grind them into a powder.
Add some vegetable oil (sesame, corn or sunflower) and some rice syrup. I would say, for 6 oatcakes, 1 heaped teaspoon or rice syrup is fine. As for the oil, go very gingerly, and add it litlle by little till you have the texture you want: the crushed oatcakes should stick together in little clusters, just like granola.
This is lovely sprinkled on yogurt, or custard, or... anything sweet really.

I recommend these to anyone who's keen not to find any dodgy oils, rising agents or wheat flour in their oatcakes. They are really good and the ingredients are reassuringly straightforward.
