Billington's Fairtrade light brown soft sugar is a versatile baking sugar with a mild caramel flavour, ideal for cakes, puddings and biscuits. This sugar has been simply produced, locking in rather than refining out the natural molasses of the cane sugar, giving it superior depth of flavour and colour to that of refined sugar.

Baked Fruit - Mon 16th Jan 2012
Chop the flesh of 1/2 pineapple and 2 mangoes into bite-size cubes and slice 2 bananas. Fold a large sheet of kitchen foil in two and then place prepared fruit in the centre. Sprinkle over the grated zest and juice of 1 lime, 2 tsp light brown sugar and 1/2 tsp mixed spice and fold the foil inward from the corners, so that it envelops the fruit. Seal well and bake in the oven for 15 mins at 200 degrees C/gas 6. Remove from the foil and serve warm in individual bowls with a large dollop of fromage frais or Greek yoghurt.
