Serving Suggestion

Edamame beans are a tasty and refreshing appetiser, and a great accompaniment to beer. Commonly eaten salted, the beans are popped out with fingers to eat.

You can also enjoy these Edamame by frying from frozen (with the pod intact) in a wok with a little vegeatble oil, lime and salt. Chilli may be added when cooking if you prefer it hot.

Salad from Sandy Halliday The Detox Specialist

½ cup dried, fully cooked Edamame beans
Half an onion, diced
2 green chillies, seeded and minced
1 red pepper, diced
Half a bunch fresh coriander, chopped
1 plum tomato, dice
Freshly ground black pepper to taste
Dressing

3 tablespoons olive oil or salad oil
2 tablespoons lime juice
2 tablespoons Tamari sauce
1 teaspoon grated fresh ginger
1 clove garlic, minced
Directions

In a large bowl, combine all salad ingredients. Mix well.
Make dressing. Put all ingredients in lidded jar and shake well to mix
Pour over a little dressing over bean salad.
Allow to stand 1 hour before serving.
Serve extra dressing separately.
