Steak & Mushrooms in Cream - Sun 13th Nov 2011
Cook 4 steaks to your liking. Cook a handful of sliced mushrooms in 1 tbsp butter until softened. Add 125 ml double cream and simmer until reduced and thickened, adding more cream as necessary. Season with salt and plenty of black pepper and serve.

Mini Cherry Trifles - Mon 16th Jan 2012
Place 150 g cherries, stoned and chopped into a small pan with 1/2 tsp mixed spice, 2 tbsp brandy and 1 tbsp caster sugar and simmer for 5 mins. Divide 60 g trifle sponges between 8 shot glasses. Spoon over cherries and set aside. When cool top with some ready made custard and chill for an hour. To serve, whip 150 ml cream, top the trifles and sprinkle with grated dark chocolate.
