Biofair raw cane sugar comes from a project in Paraguay. In reference to Raw Cane Sugar, the word Raw when related to sugar does not refer to the temperature at which the extraction has been carried out as in the definition of other RAW foods, but in the context of sugar the word Raw refers to a sort of lightly refined sugar and has been a word used to describe this type of sugar for many many years. In all cases, raw sugar is the product of the first stage of the cane sugar refining process, and as a result it has some very distinctive characteristics.

Ginger Zinger - Tue 17th Jan 2012
Simmer 125 g sugar, 125 ml water, 1 tbsp grated fresh ginger and the zest of a lemon for 5 mins. Cool and strain. Divide between 6 champagne flutes, top with sparkling white wine and add a thin slice of lemon. Cheers!

Sweet Glazed Carrots - Thu 9th Feb 2012
Put 250 g small baby carrots (washed and trimmed) in a small saucepan with the juice and rind of 1 large orange, 30 g butter and 1 tsp sugar. Just barely cover with water. Bring to the boil, cover and simmer until the carrots are tender and the water has evaporated. Watch closely towards the end of cooking, and shake the pan occasionally to prevent the carrots sticking.
