Pineapple and Coconut Crumble - Sat 12th Nov 2011
Place the pineapple rings with half of their juice in a shallow 28cm round ovenproof dish. Place 1/4 cup plain flour and 2 tbsp caster sugar in a bowl and mix to combine. Add 50 g cold butter (in pieces) and rub it into the flour and sugar mixture. Mix in 1/2 cup shredded coconut and 1/4 cup flaked almonds. Spoon the crumble on top of the fruit and bake at 180 degreed C/Gas 4 for 40 minutes or until golden. Serve warm with ice cream or custard.
