Wild Rice with walnuts & dates - Tue 27th Oct 2009
I love this rice dish as it adds some crunchy texture to the rice, making it an ideal side dish to dahl or a crunchy veggie dish. Great with cauliflower cheese or with chicken breasts.
Servings: Makes 6 to 8 side-dish servings.

Ingredients
4 stalks celery, chopped (2 cups)
1 small onion, chopped (1/4 cup)
1 tablespoon margarine or butter
90g wild rice mix, rinsed and drained
400ml vegetable bouillon
400ml water
45g pitted whole dates (such as medjool), snipped
45g chopped walnuts, toasted
Directions
1. In a 10-inch pan cook celery and onion in hot margarine or butter about 10 minutes or until tender. Add uncooked wild rice; cook and stir for 3 minutes. Add broth and water. Bring to boiling; reduce heat. Cover and simmer for 50 to 60 minutes or until most of the liquid is absorbed and rice is tender.
2. Stir in dates and walnuts. Cook, uncovered, for 3 to 4 minutes more or until heated through and remaining liquid is absorbed. Makes 6 to 8 side-dish servings.

Fruity Rice Salad - Thu 8th Dec 2011
Cook 300 g rice mix, drain, rinse in cold water to cool down, then drain again thoroughly. Put the rice into a serving bowl. Remove peel from 3 sweet mandarins, taking off as much pith as possible. Cut into chunky slices. Squeeze the juice from another mandarin into a bowl and mix with 3 tbsp olive oil. Season with salt and pepper. Add the clementine dressing to the rice along with 100 g dried cranberries, 3 finely sliced spring onions, 50 g toasted chopped walnuts and some chopped flat leaf parsley. Toss to combine and then fold through the mandarin slices. Season and serve.

I have to say I always order this rice as it is the nicest we have eaten. My sister's daughters are not keen on rice, but they love it too. It cooks really well in the microwave or on the hob and works well in any recipe and is tasty enough to eat on its own. Well worth the price.

This is one of my favorite wild rices mixes ever! Sometimes if I am unwell, it is one of the only things I will eat. I love just eating it on its own with some steamed broccoli and garlic too. Nom nom nom.
