Use up to 1/2 can light coconut milk (together with some milk or apple juice if you like) to soak 50 g oats, 10 g wheatgerm, 1 tsp golden flaxseeds and 15 g sultanas overnight. At breakfast, serve with added milk or apple juice if required plus tropical fruits (such as mango, banana and pineapple), yoghurt, lime juice and honey for drizzling.

It's really brilliant to find a 'light' coconut milk that's also organic. Obviously it's not a thick and creamy as a full fat version but still has good flavour and works well in recipes so is a good option for when you want something less rich.
