Summer Berry Brulee - Sat 1st Oct 2011
Cook 400 g frozen berries in a pan with 1 tbsp water until soft. Add 1 tbsp demerara sugar and divide the mixture between 4 heat-proof ramekins. Put in the fridge to chill. When ready, preheat the grill and divide 200 ml natural yoghurt between the ramekins to top the fruit. Smooth down with the back of a spoon and sprinkle with 1 tbsp of demerara sugar and 1 tbsp flaked almonds. Grill until the sugar is melted and bubbling. Serve immedately.
