Mix together 1/2 cored and thinly shredded red cabbage, 1 small sliced red onion, 1 peeled and sliced carrot, the seeds from 1 pomegranate, 1 juiced and zested lemon, 2 tbsp extra-virgin olive oil and a pinch of sugar.

A lovely rich tasting, olive oil. Very versatile: obviously it's great in cooking and salads. I've also found it palatable when eating spoonfuls of it it help my dry skin & eczema.

A very good quality oil that tastes great in all types of cooking but is particularly good with raw foods. It is very silky in texture and less harshly spicy than some olive oils.
