Oriental Brown Sugar Glaze - Mon 22nd Aug 2011
Mix 1 tbsp demerara sugar, 2 tsp mirin (rice wine), 1 tbsp soya sauce and 2 tsp rice vinegar. Spoon over salmon, chicken or prawns and leave to marinate for around 30 mins before griddling. Good for bbqs.

A good alternative to refined white sugar in most cases. Can also be put in a food processor to crush into smaller particles for baking.

This is similar to the light Brown sugar but a little more versatile, I find that it works well in both light dessert making like sponge cakes and muffins but also works in Asian cooking like Thai dishes that require sugar. It's very sweet yet blends well with other flavours.
