Really handy to have in the cupboard, hard to find 'breadcrumbs' without soya in and these just taste the same if not better! My son is allergic to most ready-made foodstuffs and these are great for homemade chicken dippers, fish fingers and the packet says they can be used in sweet things too which I've yet to try...

Parboil 800 g halved potatoes for 10 mins, drain and set aside. Wrap 250 g salmon fillets in foil and bake at 200 degrees C/gas mark 6 for 10 minutes. Flake salmon into a bowl and grate the cooked potatoes on top. Add some seasoning and herbs (optional), mix well and shape into 8 fishcakes. Coat in beaten egg and then rice crumbs. Place on a baking tray, brush with 2 tbsp olive oil and cook at at around 200 degrees C/gas mark 6 until golden and cooked through.
