Mackerel in Vinegar - Sun 7th Aug 2011
Fry 4 cleaned mackerel well on both sides. Fillet the fish, removing the skin and bones. Cool. Fry 4 medium sliced onions with a little crushed garlic and a bayleaf until brown. Allow to cool then add 4 tbsp white wine vinegar to the onion mixture. Serve the mackerel in the vinegar sauce when cold.
