Breton Spinach - Mon 16th Jan 2012Remove tough stems from around 1.5 kg fresh spinach and chop the leaves roughly. Cook in boiling water with a handful of coarse sea salt, freshly ground black pepper, a small sprig of fresh thyme and a sliced spring onion until tender. Drain well and remove the thyme sprig. Mix in 150 ml single cream with the juice of a lemon and season with salt and pepper (to taste). Add to drained spinach and serve with croutons freshly made with bread and butter.
