Marinated Herrings - Fri 11th Nov 2011Chop around 675 g fresh filleted herrings into small pieces and season with 2 tbsp soya sauce and ground back pepper. Combine around 240 ml natural yoghurt with the grated rind and juice of 1 lemon, 4 tbsp white wine vinegar, 3 tbsp olive oil and 1 tbsp clear honey. Add 1 cored and diced red-skinned apple, 1 finely sliced small onion, 1 tsp dried dill and 2 bay leaves. Mix well and stir in the herring pieces to coat uniformly. Leave to marinate for at least 24 hours in the fridge. Stir well before serving.
