Heat 2 tsp toasted sesame oil in a large saucepan, add 1 head of shredded spring greens, cover and cook over a low heat until tender. Season to taste with salt and pepper and stir in 2 tbsp toasted sesame seeds. Serve immediately.

Perfect quality seeds. I have then with brown linseed, blue poppy seeds, chia seeds, pumpkin seeds, sunflower seeds and different dried fruit such as cranberries, mango, strawberry, apricot or banana in homemade granola based on oats, flaked almonds and desiccated coconut that is brought together by honey.

Try roasting an aubergine in the oven until well browned, then peeling and blending with a crushed clove of garlic, a spoonful of sesame seeds, a dollop of natural yogurt and lemon juice. Serve on lightly toasted multi-seed bread for a starter or snack.
