Curiously enough the walnut is formed inside the stone of the green plum-sized fruit of the walnut tree.
Walnuts are very nutritious, containing valuable amounts of B vitamins, iron, zinc, copper, phosphorus, calcium and vitamin A. Of all nuts, they have the highest proportion of polyunsaturated oils which are valued for the essential fatty acids they provide, whilst being cholesterol-free.

Apricot & Walnut Stuffing - Tue 17th Jan 2012
Soak 75 g dried apricots then chop. Mix with 40 g chopped walnuts, 100 g white breadcrumbs, 50 g sultanas and a pinch of salt. Saute 1 medium chopped onion in 25 g butter/margarine and add to the stuffing mixture along with 2 tbsp milk. Mix well. Use to stuff joints before roasting. Especially good with lamb.

Brie & Walnut Bites - Thu 17th May 2012
Try topping brie with a few walnuts, then pouring over a little warm good quality honey. Serve on water biscuits for a sticky, indulgent treat.
