Turn a rice pudding into a very creamy and buttery dessert by adding a bit of coconut while it is cooking. You will be surprised by the rich dairy taste and smell and the thick creaminess of the texture. All dairy-free of course!

A vital and healthy product. I'm such a fan of the new coconut health movement. Better when used with a low carb sugar diet

I haven't cooked with dessicated coconut for years, but fancied making some macaroons...I went for the almond variety, as the jury is out on how good coconut is for your cholesterol levels...but just a spoonful of this coconut in a batch of biscuits was enough to give a beautifully moist and chewy taste...I haven't tried it yet, but I bet it's fab in porridge !
