All our ground and flaked almonds are blanched (the brown skin is taken of the almonds before grinding them). This can be called grounds almonds or almond flour as it usually referred to in the U.S. Almond meal is made from ground almonds with the skins still on. Almond flour can be used in baking and confectionery, including some favourites like macaroons and pastry, Bakewell tart, and frangipan cake. Almond flour is also a versatile ingredient for those on a low carbohydrate diet. It adds moistness and a rich nutty taste to baking.

Recipe
Almond biscuits
100g unsalted butter
1 egg separated
1/2 tsp ginger powder
60g currants
caster sugar for sprinkling
80g caster sugar
1/2 tsp almond essence
grated rind of 1/2 lemon (optional)
180g finely grounded almonds
Oven Temperature: 150c/300f/Gas Mark 2
1. Beat the butter and sugar together until smooth. Beat the egg yolk and essences together with a fork and then beat them into a butter mix.
2. Stir in the rind if using. Add the currants and the ground almonds and mix together to form a dough.
3. Place a piece of greaseproof paper on the worktop. Place the ball of dough on top and cover with a piece of all-purpose food wrap. Roll out to the required thickness and carefully peel off the food wrap.
4. Sprinkle a little ground almond over the dough, turn over on the worktop and peel off the paper. Cut out using a 6cm cutter and place on the prepared baking trays. Re-roll the trimmings, as before.
5. Bake in a pre-heated oven for about 10 minutes until barely coloured but firm. Remove from the oven, carefully brush with a little beated egg white and sprinkle with caster sugar.
6. Bake for a further 5-7 minutes or until evenly browned. Leave for a minute or two, then carefully transfer to cooling racks until cold.
Note: The biscuits will be soft when freshly cooked but will become crisp as they cool.

Great product. I use it to make pastry and biscuits which are great on a low carb, slow carb diet. Used with sweetener or xylitol they taste as good, if not better than wheat flour.

Delicious in gluten free baking - I have used ground almonds (also known as almond flour) in many delicious gluten-free recipes. It is high in protein and low in carbohydrates making it excellent for anyone watching their carbohydrate intake.
Use it to make home-made marzipan - yum!
