All our organic ground and flaked almonds are blanched (the brown skin is taken of the almonds before grinding them). This can be called ground almonds or almond flour as it usually referred to in the U.S. Almond meal is made from ground almonds with the skins still on. Almond flour can be used in baking and confectionery, including some favourites like macaroons and pastry, Bakewell tart, and frangipan cake. Almond flour is also a versatile ingredient for those on a low carbohydrate diet. It adds moistness and a rich nutty taste to baking.

This stuff enables me to bake tarts, cakes and biscuits by substituting flour and still remain on my slow/low carb diet. It makes better cakes than using normal flour.

Try adding a tbspn or 2 to a smoothie to enhance the calcium and protein content. It blends in really well and adds a nice richness. I also use it to sprinkle onto cooked dishes instead of using parmesan. Completely different I know, it adds a lovely flavour and if you either can't or don't want to eat dairy is a lot more natural than 'parmezano' vegan parmesan substitute.

Fruity Thick Shake - Fri 10th Aug 2012
Blend together 150 g soft fruits (berries, mango, banana, peach, apricot, or kiwi fruit), 250 ml natural yoghurt, 250 ml fruit juice (orange, apple, pineapple or cranberry), 50 g ground almonds, 2 tbsp runny honey, 3-4 tbsp wheatgerm and a dash of ground cinnamon. Add some ice cubes and serve.
